Final Gravity

Wyeast 1084 Irish Ale Yeast

0.75 lbs Muntons dark crystal malt
0.5 lbs Muntons chocolate malt
0.25 lbs Vienna malt

6 lbs Muntons unhopped light liquid malt extract

Columbus Hops (1 oz of 12% AA)
Willamette Hops (2 oz of 4% AA)


  1. Heat 2 gallons of water to 152 degrees.
  2. Hold water at 152 degrees and steep grain for 45 minutes.
  3. In an additional pot heat 2 gallons of water to 175 degrees.
  4. After the grain from step 2 has steeped for 45 minutes remove the bag of gain letting as much liquid drain into the pot as possible.
  5. Remove the second pot from the heat and “tea bag” the grain bag in the water for 10 minutes.
  6. Remove the grain bag from the sparge water and add the wort to the main pot.
  7. While bringing the main pot back to a boil add the liquid malt extract and 1oz of Columbus hops.
  8. Boil for 85 minutes.
  9. Add 2 oz Willamette hops.
  10. Boil for 5 more minutes and remove from heat.
  11. Cool to 60 degrees, add additional chilled water to just above 5 gallons.
  12. Add yeast.
  13. Let ferment for 5-6 days between 64-68 degrees.
  14. Move to secondary (or leave in primary) for additional 10 days. The cooler the beer during secondary, the better. 58-62 degrees preferred.
  15. Bottle with priming sugar, and let condition for 3 weeks.
